ratatouille

A while ago, our friends hosted a dinner night.  The theme was based around a vegan diet,
 and I decided to make ratatouille to bring and share.  I love this dish. 
I do like it with a good grating of gruyere on top, but for the dinner we skipped the cheese.  I'm going to do a Pioneer Woman style recipe so that you can make this yummy dish too!


First I start off with a clean countertop.  And bad kitchen lighting.  (I need some windows in here!)


Ingredients:

zucchini
eggplant
garlic
onion
green peppers
tomatoes
olive oil
salt/ pepper
herbs de provence

I don't have any exact measurements, but you really don't need them. 
I think herbs de provence makes this dish.  I also use this in vegetable soups. 
 Just a wiff takes you to Provence. ;)
Put a good amount of EVOO in your pot and heat.  Add a chopped onion and garlic to saute.
Then add your sliced green peppers.
Next comes your roughly chopped tomatoes.
Shake in some herbs de provence!
the recipe calls for a can of tomato paste if you have tasteless tomatoes.  I usually add one in.
Next add your sliced eggplant.
Then your zucchini.
Give it all a good stir. Add salt and pepper to taste. Cover, and let simmer on low heat for a good hour or two. 
This dish is yummy the day of, but tastes even better as leftovers.  Enjoy!
