Have you ever had a wedge salad?

We first had a wedge salad at Hamiltons in Logan, Utah. Yum. It is my favorite kind of salad. Soon after, we discovered that restaurants like Johnny Carinos. Just a few weeks ago we went to Claim Jumper in Henderson and I had their wedge salad. It was so delicious that I was determined to make my own. I found a recipe that is pretty close. Here it is with my modifications added in:


3 tablespoons crumbled Stilton or other fine-quality blue cheese
1/3 cup tablespoon sour cream or plain yogurt
1/3 cup mayonnaise
1 teaspoon wine vinegar
four 1-inch-thick wedges of iceberg lettuce
bacon crumbles
purple onions, diced

Mix the yogurt, mayonnaise and vinegar together with a wisk to make the dressing. Set aside.
Cut the iceberg lettuce into wedges and set on a plate. Sprinkle with blue cheese. Pour some gloriously smooth dressing over the wedge and make sure to get some in the folds of the lettuce. Then sprinkly with bacon and diced onions.
Be sure to include a steak knife at the table setting to cut the salad as you eat it.

Yum! I could just eat a lettuce wedge plain (and I do) I love lettuce so much - and with dressing on it it would just make it even better. I'll definitely look for it on menus now.

I've never even heard of this. I'm sure it will be like most things - something you didn't know existed, but then once you realize it's there, you notice it more and more. Like when you learn a new word, and then it seems like you read it and hear it everywhere after that.
